Cookie Ice Cream Sandwich

A cookie ice cream sandwich is a frozen dessert made by placing a layer of ice cream between two soft or chewy cookies. Cookie Ice Cream Sandwich Delight
A thick scoop of rich, creamy ice cream nestled between two soft, freshly baked cookies, creating a decadent treat that is cool, chewy, and irresistibly satisfying.

Method
- Pre heat oven to 325 degrees
- Line a 10×15 cookie sheet with wax paper and lightly oil paper

- Melt butter and chocolate chips

- Stir and allow to cool. Beat together sugar and egg until greamy and pale. Beat in melted chocolate and vanilla. Add flour , cocoa powder baking powder. Continue beating until incorporated.

- Transfer to pan and spread evenly to edges. Bake 15 minutes. Then remove from oven

- Cool 10 minutes and invert on cutting board. Carefully remove wax paper and using a sharp unserrated knife, cut in half lenghth wise twice and then again wideth wise twice making 16 pc

- When completely cool spread a thick layer of ice cream on one cookie and top with another wrap with plastic wrap and freeze for at least 4 hours
