Cantaloupe Daquiri Shrub

This recipe begins with a fresh cantaloupe shrub starter, blended and strained for a smooth, flavorful base. Lightly sweetened and enhanced with citrus zest, the shrub is chilled to develop its depth before being shaken with rum and lime juice. Served ice-cold, it delivers a crisp, refreshing cocktail with a soft melon finish.

Ingredients
  

  • 1 cantaloupe, cubed
  • 1 tsp lime zest
  • 1 cup sugar
  • 1.5 oz white rum
  • 1 cup champagne
  • 3/4 oz fresh lime juice
  • garnish with sliced cantaloupe, limes

Method
 

  1. Cantaloupe Daquiri Shrub Starter. Puree cubed cantaloupe, sugar, champagne in a blender

  2. Stir in 1 tsp lime zest. Chill for 4 hour up to 2 days.

  3. Strain shrub through a fine mesh wire strainer into a quart jar or air tight container. Strained shrub will last up to 3 weeks chilled in an air tight container in the refrigherator.

  4. In a cocktail shakeeer half filled with ice, combine 2 oz cantaloupe shrub starter, white rum lime juic.e

  5. Shake until very cold. Strain into an ice filled wine glass or water goblet.
